Braised Pork with Dark Beer, Mustard & Roasted Sweet Potato

- Sear the pork in a hot skillet with olive oil until browned on all sides. Season with salt and pepper. Remove from pan.
- Pour in dark beer, add mustard and soy sauce. Stir and let cook 1–2 minutes to cook off the alcohol.
- Return meat to the skillet, cover with a lid, and braise on low heat for 1.5 hours.
- Meanwhile, slice sweet potato, toss with aromatic salt, pepper, and a little olive oil. Roast at 200°C (400°F) for 15 minutes.
- After 1.5 hours, remove the lid and let the liquid reduce until it coats the meat in a glossy caramelized glaze.
- Remove meat from the skillet. Add beef broth, scraping up all the bits from the bottom. Strain the sauce and finish with butter and a squeeze of lemon juice.
- Serve pork with the rich sauce poured over, alongside roasted sweet potato. Garnish with fresh parsley.
