Braised Pork with Dark Beer, Mustard & Roasted Sweet Potato

  1. Sear the pork in a hot skillet with olive oil until browned on all sides. Season with salt and pepper. Remove from pan.
  2. Pour in dark beer, add mustard and soy sauce. Stir and let cook 1–2 minutes to cook off the alcohol.
  3. Return meat to the skillet, cover with a lid, and braise on low heat for 1.5 hours.
  4. Meanwhile, slice sweet potato, toss with aromatic salt, pepper, and a little olive oil. Roast at 200°C (400°F) for 15 minutes.
  5. After 1.5 hours, remove the lid and let the liquid reduce until it coats the meat in a glossy caramelized glaze.
  6. Remove meat from the skillet. Add beef broth, scraping up all the bits from the bottom. Strain the sauce and finish with butter and a squeeze of lemon juice.
  7. Serve pork with the rich sauce poured over, alongside roasted sweet potato. Garnish with fresh parsley.
