Fragrant Pork Braised in Dark Beer

Original recipe by @vasilymishlen (in Russian). Spice amounts are estimated — check original for exact quantities. Dark beer: Guinness works well. Sweet potato: bake on silicone mats at 200°C. Author has a separate aromatic salt recipe.

Instructions

  1. Prep the pork. Slice pork into steaks. Season with salt, pepper, paprika, and olive oil. Rub spices in well.
  2. Sear. Cook steaks in a very hot pan until golden brown on both sides. Set aside.
  3. Aromatics. In the same pan, add butter, finely chopped onion, lots of garlic, thyme, and orange zest. Squeeze in orange juice. Cook until fragrant.
  4. Sauce base. Pour in dark beer, add Dijon mustard and soy sauce. Simmer 1–2 minutes to cook off the alcohol.
  5. Braise. Return pork to the pan, cover with a lid, and simmer on low heat until cooked through and tender.
  6. Finish the sauce. Add chicken broth and butter, stir to combine. Add a few drops of lemon juice for gloss.
  7. Sweet potato side. Drizzle with olive oil, sprinkle with aromatic salt, and bake at 200°C for 15 minutes.
