Fragrant Pork Braised in Dark Beer
Original recipe by @vasilymishlen (in Russian). Spice amounts are estimated — check original for exact quantities. Dark beer: Guinness works well. Sweet potato: bake on silicone mats at 200°C. Author has a separate aromatic salt recipe.

Instructions
- Prep the pork. Slice pork into steaks. Season with salt, pepper, paprika, and olive oil. Rub spices in well.
- Sear. Cook steaks in a very hot pan until golden brown on both sides. Set aside.
- Aromatics. In the same pan, add butter, finely chopped onion, lots of garlic, thyme, and orange zest. Squeeze in orange juice. Cook until fragrant.
- Sauce base. Pour in dark beer, add Dijon mustard and soy sauce. Simmer 1–2 minutes to cook off the alcohol.
- Braise. Return pork to the pan, cover with a lid, and simmer on low heat until cooked through and tender.
- Finish the sauce. Add chicken broth and butter, stir to combine. Add a few drops of lemon juice for gloss.
- Sweet potato side. Drizzle with olive oil, sprinkle with aromatic salt, and bake at 200°C for 15 minutes.
